What are the Best Vegetables to Grow in the Northeast?
- Root vegetables are among the best. Potatoes thrive and store well. Beets, leeks, onions and garlic add nutrients and flavor, are easy to grow, and make a great stew when cooked together.
- Peas can be planted after winter as soon as the soil thaws. Their peculiar love of cold makes them ideal early spring and early fall crops.
- Another good choice are plants in the cole family. Broccoli and cauliflower do well in the cooler springs and late summers.
- Most leafy greens grow well, and with protection from wind, ice and snow, can be grown in unheated greenhouses. Leaf lettuces, spinach and kale are exceptional choices.
- Native Americans grew three vegetables in a configuration dubbed "the three sisters." Corn, squash varieties and beans were companion planted resulting in a veritable smorgasbord.
