How to Make Rabbit Cupcakes
- 1). Add three drops of green food coloring to 1/4 cup of flaked coconut in a small bowl. Mix the coconut well to tint it green, adding more food coloring if necessary.
- 2). Spread 1/4 cup of vanilla frosting on the top of a cupcake using a spatula. Press the cupcake, frosting-side down, in the tinted coconut.
- 3). Place a large marshmallow on one of its flat ends. Cut it in half across the middle with a pair of scissors so you have two halves that each has a flat side and a sticky side from the cut.
- 4). Press the sticky side of each marshmallow in a small bowl of pink-colored sugar. Spread vanilla frosting to the opposite side of each marshmallow half. Position the marshmallows on the cupcake on top of the coconut, side-by-side so they look like rabbit ears.
- 5). Place a jellybean in the center of the top of the cupcake for the rabbit's nose. Add two miniature chocolate chips above the jellybean to make the rabbit's eyes. Position three rod-shaped chocolate sprinkles on each side of the jellybean so they appear to be the rabbit's whiskers. Press a miniature candy carrot in the space below the jellybean.
