Blueberry Cobbler—the quintessential American dessert.

Fresh blueberries star in this simple, down-home dessert—the fruit cobbler. It's so simple, in fact, that all you need is a baking dish, some fruit, and a few ingredients from the pantry to make the topping and you're ready to go.
 

Ingredients
  • 4 cup blueberries, fresh or frozen
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 teaspoons grated lemon zest
  • 2 teaspoons fresh lemon juice
  • Pinch salt
  • 1 cup old-fashioned rolled oats
  • 1 packed cup light brown sugar
  • 1/2 cup plus 2 tablespoons unbleached flour
  • 1/2 cup shredded unsweetened coconut
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter

  • Cook Time: 45 minutes

  • Yield: Serves 4 tp 6


Preparation

1. Toss the blueberries, sugar, and cornstarch. lemon zest, lemon juice and pinch of salt together in a medium bowl.

2. In a separate bowl, mix together the rolled oats, sugar, flour, coconut and sea salt. Cut in the butter with a pastry cutter or 2 knifes until the mixture resembles coarse crumbs. Lightly mix until the oat mixture is crumbly.

3. Press 1/2 of the oat mixture (about 1 1/2 cups) into the bottom of an 8-inch square pan.

Cover with the blueberries, and then top with the remaining oat mixture.

4. Bake the cobbler at 350°F for 45 minutes, or until the topping is browned and the blueberries are bubbling. Remove the pan from the oven and set it on a wire rack to cool slightly before serving.

 

Recipe Notes and Tips

• he fruit filling can be as simple as you like, or get creative. Combine two or more fruits, and add interesting flavors like grated fresh ginger, ground spices, or grated citrus rind. Toss it all together, and place in a ceramic or glass baking dish.

• Baking in individual dishes is another option when making a cobbler. This recipe can be baked in  a ramekin or other earthenware, but if you opt for that route, they won't need to bake as long, just 30 minutes.
